COOKING: CHICKEN BURGERS



I’m done with hamburgers! I have reached my summertime limit! No more burgers! Well sort of…I will have a Chicken Burger please. It is not just because I am tired of hamburgers these Chicken Burgers are really delicious and a family pleasing meal. It is critical to purchase ground white meat chicken and feel free to muck around with the seasoning. 

Grill away and enjoy.

Chicken Burgers

Ingredients
  • 1 pound ground white meat chicken
  • 2 cups coarse to fine fresh bread crumbs, divided (not canned)
  • 1/2 cup low-fat milk
  • 3 tablespoons grated sweet onion (or finely, finely minced)
  • 1/4 teaspoon cayenne pepper
  • 3/4 teaspoon coarse grained salt
  • Cracked black pepper
  • 1 teaspoon olive oil


What to Do
  1. Place chicken in a mixing bowl. Fold in milk, 1/2 cup bread crumbs, onion, cayenne, salt and pepper. The mixture will be very wet.
  2. Place remaining 1 1/2 cups bread crumbs on a dinner plate or cookie sheet.
  3. Using your hands, divide chicken meat and shape into 4 or 5 patties.
  4. Coat each patty with bread crumbs.
  5. Heat olive oil in a large non-stick skillet over medium heat and fry patties about 5 minutes per side until golden and cooked through,
  6. Place on sour dough bun and garnish with lettuce tomato and onion.
