COOKING: DANGEROUSLY GOOD CARAMEL POPCORN



There are sweet treats that are good, some sweet treats that are really good and others that I would categorize as dangerously good. This recipe for Carmel Popcorn fits the later. I find it hard to not take nibbles as I am making it and trust me this is a bad idea since I burn my tongue every time.
It is a little on the labor intensive side but it is worth it. I have found that it is best to follow the directions and not double the recipe but work in batches. You will be working with sticky stuff so keep close at hand a can of non-stick spray and give a good coating to everything you will be using…the pots, the bowls and the spoons.

Ingredients
  • ½ cup un-popped popcorn
  • 1 stick butter
  • 1 cup brown sugar
  • ¼ cup corn syrup
  • Baking soda
  • Vanilla
  • Salt


What to Do
  1. Pop your popcorn. Once popped place in large bowl sprayed with non-stick spray.
  2. In a sauce pan (sprayed with non-stick spray) combine butter, brown sugar and corn syrup. Cook until melted together and boiling…then leave it alone to boil for 5 minutes.
  3. After 5 minutes pull it off the heat and add the vanilla, salt and baking soda and stir.
  4. Once all the ingredients are stirred up add the mixture to the popcorn. You will need to work fast to coat all the popcorn but remember this is worth it!
  5. Empty your popcorn into a glass baking dish and bake in the oven at 250 for 20 minutes.
