Whether you are a vegetarian or not you will love these super easy and incredibly yummy black bean and corn quesadillas. The simple beauty of this recipe is you can take it as it is or jazz it up with add on ingredients like chicken, beef or roasted veggies.
Black Bean and Corn Quesadillas
Ingredients
- 1 can corn drained
- 1 can black beans rinsed and drained
- ¼ cup light olive oil
- 2 Tb lime juice
- Fresh cilantro to taste (I love cilantro so I use a ton)
- Salt
- Pepper
- Flour tortillas
- 2 Cups shredded Monterey Jack Cheese
What to Do
- Heat oven to 320
- Drain and rinse corn and black beans and place in bowl.
- Add olive oil and lime juice.
- Chop up cilantro and add to corn and beans
- Season with salt and pepper
- Mix in cheese to corn and beans.
- Scoop mixture onto a tortilla and top with second tortilla.
- Place in over for 10-15 minutes flipping half way through.
